A mix of ‘neo-traditionalist’ consumers and recession-driven thriftiness has fuelled home baking’s continued growth. But how can the industry ensure it keeps rising, asks Jon Severs

Over the past few years, ‘bah humbug’ types have attempted to write off home baking’s growth as a temporary upward blip.

If it weren’t for the tough economic conditions, baking’s sudden popularity with celebrity chefs and the wave of nostalgia sweeping the land, nobody would bother, they argue.

And as soon as the economy recovers and those celebrity chefs move on to the next big thing, home baking’s moment in the sun will be over. But will it?

Over the past year, value sales have risen by 11.2% and volume sales by 5.4% [Kantar 52w/e 15 May 2011] – exceeding even 2010’s strong performance. This seems to back up the sector’s conviction that its upward trajectory is genuine and long-lasting.
