The UK’s world foods scene is a riot of colour and innovation, with Latin American cuisine tipped to be the next hot market

Oow do you fancy roast guinea pig? What about farofa, chuchu and cassava root? OK, so maybe these South American specialities won’t replace roast beef and Yorkshire pudding Sunday lunch any time soon. But with our apparently insatiable appetite for authentic new cuisines – and South American food picked by a number of experts as the next big trend in world foods – supermarket shelves are bursting with new, often authentic and constantly changing new tastes and flavours.

The continued expansion of world food in the UK is not just a foodie phenomenon, any more than it is a result of cheap travel or the plethora of TV cooking programmes. It has been driven by the growth of the British ethnic population in the UK, which increased by 4.1% between 2001 and 2009 , according to the ONS – an increase of 2.5 million people – while the number of residents from a ‘nonwhite’ background now totals 9.1 million. Combine that with greater store segmentation from more enlightened multiples and it’s clear the blue touch paper is well and truly lit. But how and where is the market growing, and why? And which retailers and manufacturers are expected to lead the charge in 2013?
