Among industry spokesmen who have tried, diplomatically, to help producers understand market 'dilution' of returns is Scottish meat wholesalers' leader Neil Stoddart who has pointed to the misleading impression given by the high prices of good beef cattle in Scotland, warning that although buyers would often pay a premium for Scotch hindquarter "with the fore we're up against everyone else, and having to take an English price". And even within the retail carcase beef market, which is mostly hindquarter, about 40% of purchased volume is of mince, often promoted by the multiples down to 99p per 500g pack. {{M/E MEAT }}
