As part of its drive to develop niche markets, Waitrose is trialling little known organic Scottish-bred blue skinned potato Edzell Blue. It is available in selected stores this month priced at £1.99 kg. The crop has been grown in Angus by Solanum.
First raised in Forfar, Edzell Blue was a popular local purchase just before the First World War because of its floury structure with high dry matter content and fluffy white flesh which allowed a high degree of versatility in cooking. It is as flavourful as Arran Victory, but an earlier crop and has never been sold commercially by any UK supermarket before, said Waitrose.
