In our 25 stores we devote between three and nine metres of aisle space to the category, according to shop size, and carry a wide range of brands. "Our best-sellers are still the classics, such as Heinz, HP and Hellmann's in sauces, and Baxters beetroot in pickles, a reflection of our mature customer base which is less inclined to be experimental. "However, people are more willing than ever to try new things and I'm amazed at how long they study products and labelling before they buy. A newcomer that's surprised me by doing really well is Peppadew, a sweet cherry pepper from South Africa. "We've brought out our own organic dressings, taking the organic route to provide a point of difference in a very crowded market."
