A new Mexican company called Fruit Tech is geared up to supply organic avocados that are peeled and halved when fully ripe and then frozen in special bags of four portions ready to be shipped.
The freezing process is said to leave the avocados undamaged - partly because of the low water and high fat content of the fruit. The avocados simply need to be defrosted ready for use.
If that idea doesn’t grab you, how about partially dehydrated avocado slices? The slices are vacuum-packed in bags. When needed, the bags are dunked in lukewarm water for 20 minutes.
Avocado companies are also aiming to develop technology that can supply pre-packaged fresh avocado.
