Sales of cuts of meat such as shanks, hocks and cheeks are rocketing, according to Waitrose.

Sales of lamb shanks were up 200% by volume compared with a year ago, reported the retailer, adding that it had increased the size of its offer to meet rising demand.

Waitrose has also increased the number of stores selling pigs cheeks to 34 following a 10-week trial, and ox cheek sales were up an average of 80%, it added.

"The credit crunch is transforming the way Britons shop," said Waitrose meat buyer Anna Lloyd.
