Fivemiletown Creamery is planning two new versions of its Boilíe goat’s cheese pearls as it looks to build on record-breaking sales.
The cheesemaker this week reported sales of £24.5m in the year to 31 December 2011 - up 50% on 2010, and the best sales in its history. Pre-tax profits increased from £106,000 to £421,000.
Strong demand for Fivemiletown’s soft speciality cheeses, such as Boilíe, had played a big part in boosting sales, the company said.
It was now planning to launch two new Boilíe cheeses in August - one filled with tomato and basil, the other filled with black olives and pesto.
