Scottish oyster sales more than doubled last month thanks to higher-than-expected demand over the festive period.

The Scottish Shellfish Marketing Group took orders for almost 11 tonnes of oysters - most of which were shipped around Britain - rather than the usual five.

Scotland's cool waters allow the oysters to grow at a slower rate, ensuring higher quality, said SSMG chairman Michael Laurenson.

"Oyster farming can be like a military operation. Scottish oysters have to be fresh and we're working flat out to supply Britain and Switzerland with a healthy food."
