Wild thoughts in Shetland Shetland Salmon Farmers' Association is tapping the appeal of the wild with its new brochure Shetland Salmon ­ Farmed in the Wild. The brochure, highlighted at the European Seafood Exposition in Brussels last week, stresses how Shetland's prime location in the fast-running seas of the North Atlantic lends itself to the production of superior quality fish. "Farmed in wild waters, Shetland salmon have sleek silver skin and deep pink flesh that closely mirror the characteristics of their wild cousins." SSFA general manager David Sandison said. "Fast and strong tidal currents create perfect conditions for producing salmon that is naturally strong and full of flavour. This is the key message I hope to get across." {{MEAT }}
