The Specialist Cheesemakers Association has welcomed a new Food Standards Agency safety initiative as an opportunity to build understanding between health officers and cheesemakers. The FSA safety management awareness initiative is aimed 180 specialist cheese producers, many of whom run small-scale businesses using traditional production methods. The cornerstone of the initiative is a workbook to reduce the burden of planning, paperwork and identifying safety hazards. SCA chairman Tim Rowcliffe said: "Small cheesemakers have an innate understanding of how to produce safe cheese. However it is sometimes a daunting prospect to document the procedures." {{NEWS }}
