Mediterranean food supplier Belazu has launched Balsamic Pearls, an innovative product that looks exactly like caviar.

The company has transformed its Balsamic Modena Vinegar into small balls using agar agar and a process called cold oil spherification. “These jewel-like drops are perfect for sprinkling over salads, canapés and fruity puds,” said Belazu co-founder George Bennell.

The balls (rsp: £4.99) are due to go into Waitrose this month and will be joined on shelf by the brand’s Early Harvest Extra Virgin Olive Oil, White Balsamic Vinegar and a range of ambient olive snack pots in three varieties: Olympia, Pistou and Vinci.
