Sir: It is really not surprising that bone broths are the new fad (‘Lodge Farm Kitchen bringing bone broth drinks range to retail,’ 5 March) - it’s nothing new at all. If you look back in time, historically broths were favoured to cure ailments and known to nurture the immune system. And it’s well known that a stock is a basic fundamental of any good kitchen. If made correctly with carefully sourced fully traceable ingredients, stocks and broths are simple and clean and easy for the body to digest … certainly beats processed foods any day, so perhaps this time here’s a fad diet that is worth giving a go?
