Breeders are now introducing a wide range of types with colours ranging from cherry red to dark brown, which in some cases are also variegated with shades of green.

Shape, too, is becoming as important. Serrated leaves are available to improve the appearance of prepacks, as well as thicker leaves to meet the special needs of the foodservice industry.
