The acquisition of Fountains Dairy by Hawes Creamery also means that local milk producers will gain the opportunity to sell more of their milk to the creamery than before. Organic cheesemaking with imported milk will be taking a "back seat" according to incoming md David Hartley, whose policy at Hawes has been to build the business with local production. Following the break-up of Milk Marque, he sees the changes in the way raw milk is being traded as a good thing. "At last the milk market is starting to work as a market," he told The Grocer. "For years, pricing milk by end use distorted the market. Low Cheddar and liquid milk prices kept the prices of territorials down."
