Cleary written by some one who really doesnt understand the cost of financing, storing, picking and delivering multi temperature products across the country---until "technolgy" reduces the cost of physical storing and movement of stock from warehouses to caterers these disruptors will be scratching the surface. There is plenty of IT in use now for Caterers to have REAL TIME information of their costs of products and tracking of their deliveries on phones, tablets and laptops--you need to look at the wholesale businesses who are growing below the top tier.
