A new type of antioxidant-rich 'black garlic' has been launched in the UK this week.

Produced by fermenting ordinary garlic bulbs in a special machine, it has a sweet flavour and a liquorice-like texture, according to its distributor Black Garlic, which is initially selling it over the internet.

Popular in Korea, black garlic contains almost double the antioxidant content of regular raw garlic. "I'm shocked it hasn't come over earlier, especially given our love of health foods," said Black Garlic director Katy Heath.
