Tipiak's frozen canapés and petits fours are already widely used in UK foodservice, and the company is looking to match this in the retail market. The attention that goes into its products is impressive, with each petit four finished by hand by professional patissiers. Its biggest seller is 'pain surprise', a loaf of bread cut into small sandwiches with appetising fillings and then put back together in a loaf shape - the surprise is in which filling you pull out. But Tipiak, which had a turnover of £37m in its party foods division last year, faces a challenge in changing the perception of frozen food in Britain. International development manager Christèle Bagnoud says she is surprised at the high level of promotion and discount expected in the UK.
