Meat-eaters are driving growth in the vegetarian sector by buying meat-free products.
In the past year the vegetarian food sector grew 8% to £582m and research by the Food and Drink Federation's Vegetarian (Meat-Free) Liaison Group found 7% of the population were vegetarian.
However, two-thirds of all Britons had eaten a meat-free meal in 2003, with 34% buying meat-substitute products such as vegetarian sausages.
FDF deputy director general Martin Paterson said: "The processed meat-free sector has developed considerably and the quality of products in this sector has also dramatically improved."
