Goose fat is experiencing a surge in popularity, say the British Goose Producers Association.
Members are selling more and more of the product through a wide variety of outlets, from independent butchers to supermarkets, said the BGPA.
The rise is demand is attributed to new research from ADAS which shows goose fat contains a relatively low proportion of undesirable saturated fats, and a higher proportion of mono or poly unsaturated fats and essential fatty acids.
A BGPA spokesman said: "Goose fat is being promoted as the magic cooking ingredient."
