Called Chrimbo Pud, the product is a twist on the traditional Christmas recipe for a pudding with a much lighter texture but with the same richness. It uses a recipe from Da Costa Greave’s Jamaican aunt, which contains butter rather than suet as well as a special blend of spices, including cinnamon, ginger and nutmeg. “Over the past few years I have been working to develop the pudding for my FYI range. It is certainly a lot lighter and less cloying than some rich fruit puddings, but it still has all the intense flavours and richness,” he said.
The pudding comes in a basin wrapped in a muslin cloth, and can be steamed or microwaved. A 454g pudding has an rsp of £9.99 and is suitable for vegetarians.
