Garlic scapes - the seed pod on the neck of garlic plants - will be available again in June after trials last year were a success.
Scotland’s The Really Garlicky Company claims to be the only UK producer of scapes, which are a milder alternative to garlic cloves suitable for stir fries, salads or as a garnish.
The scapes, which are harvested to allow the cloves to mature in size, will be available from 200 UK food outlets and the RGC’s own web site.
The company, whose slogan is ‘It’s chic to reek’, is based on a farm at the feet of the Cawdor
Hills in the Highlands, from where it also supplies garlic bulbs.
Following a successful trial of bulbs in 60 Waitrose stores last year, they will be available in 144 of the chain’s outlets in 2005.
The company has increased garlic production from 0.6ha four years ago to a total of 14ha this season.
