The Trends and Innovations area looks ahead to tomorrow's market trends and showcases exhibitors' innovative products. Designed to help manufacturers, distributors, retailers and caterers to understand the latest developments and provide sources of inspiration, it also explores the connections between consumer behaviour and the concepts that create individual awareness of food products.

A panel of international experts gives special Coups de Cœur (jury's favourites) awards to the best new products. In 2004, the committee singled out 510 products from 40 countries. This year, prestigious French retailer La Grande Epicerie de Paris will be visiting the show to select products from the Trends and Innovations area to sell in its store for two weeks.

For the second time, Sial has created an exchange area about nutrition for food professionals: the Nutrition Agora.
