Sir; I noted with interest the praise of staff at US shows versus their European counterparts (Letters, July 22). Obviously Anonymous, Bristol' has been a visitor rather than an exhibitor at such events. When I worked in the UK, I was previously a regular attendee for over 10 years at these occasions and the Gestapo' in my experience were the US show organisers. I nearly caused a staff walk-out at one fancy food show by trying to put up a picture on our stand rather than employ Union staff to do it at an extortionate rate. And bags of ice could only be bought through show organisers at prices akin to vintage Champagne. There may be a few less have a nice day' greetings at Anuga and Sial but there was a lot less trouble setting up and manning the stand. Michael Harper Melbourne Australia {{LETTERS }}
