Young's has published a guide to the fish and shellfish species it can supply, in an effort to improve understanding in the trade.

In a move that may raise some eyebrows, it is charging retail buyers, fishmongers and chefs £6.99 to get hold of a copy.

The Lexicon of Fish details the distribution and characteristics of each species, as well as its flavour and uses.

"Unlike other proteins, fish is an immensely diverse food, with different species varying hugely in character," said Wynne Griffiths, Young's chief executive. "We felt a guide such as this was a great way to give more people the confidence to experiment with species."
