Industry estimates of UK shell egg consumption are one egg higher than National Food Survey estimates, according to figures released by the British Egg Industry Council.
The gap widens even further when total egg consumption is taken into account, which also includes processed egg product.
Egg industry estimates of total weekly UK per capita consumption run at just over 3.26. For shell eggs, the figure drops to 2.7, but this is still well ahead of the National Food Survey average for the first three quarters of 1999 of just under 1.7.
Meanwhile, BEIC chairman Andrew Parker welcomed the return of the Lion Mark on British eggs, this time as a quality mark.
A £4m 18 month vaccination programme for salmonella, covering the entire British flock, is now complete. New birds for the laying flock will also get jabs.
"We believe Lion Quality eggs are now among the safest in the world if not the safest," said Parker.
Retail shell egg sales account for 62% of the UK output and catering a further 21%.
With the Lion safely back on retail product, the BEIC is ready to start planning how to start attacking the far more diffuse world of catering.
