Sir: Trewithen Dairy absolutely agrees that clotted cream is a most valuable asset and should have its traditional Cornish origins firmly protected (‘Cornish Clotted Cream makers join battle over PDO change’, 3 January).

We staunchly support the ongoing PDO status of the product and the continuation of traditional production methods and by no means are we suggesting removing the characteristic crust.

However, Cornwall Trading Standards has said there is currently ambiguity in the description of the production method of clotted cream as an ingredient for larger-scale retailing. Since the PDO was created, the appeal and market for the product supplied as a bulk ingredient has grown significantly. Trewithen was therefore asked to lead a consultation process with all Cornish clotted cream makers to address this issue and subsequently strengthen the PDO. We have done this and  recently filed the official application for amendment to Defra.

Our on-going collective aim is to ensure the current PDO is clear and robust enough to adequately protect clotted cream’s Cornish heritage, whilst recognising the growing market for the product to further support the Cornish food and drink industry sector.
