If further evidence were needed that the resurgence of fish fingers is complete, it came this week with the news that Birds Eye is launching a range of premium salmon fish fingers.

The new 100% wild salmon fillet fingers, launched this month, are being targeted at older children and families. The development follows research that showed children had become more sophisticated in their tastes but still favoured classic foods.

The products will initially be launched in Tesco, with a nationwide rollout to follow early next year.
