Convenience foods manufacturer Greencore has expanded into the sushi market for the first time with the acquisition of Liverpool-based Sushi San.

The company, which supplies own label and branded sushi products to Asda, Booths and Nisa-Today's, will operate as part of Greencore's sandwiches division, with production remaining at Crosby.

Greencore said the deal would increase its ability to tap into growing demand for healthy convenience foods.

"The sushi market is now worth in excess of £45m and is growing at 48% year on year," said Di Walker, MD of Greencore Sandwiches.
