The Red Meat Industry Forum has published a whole chain analysis project undertaken by Asda, its beef supplier Dawn Meats and producer Wold Farm.
The companies studied ways of reducing waste in the chain using beef brisket joints. Measures included developing new products, rationalisation of packaging and coping with fluctuations in demand.
Better use of lorries, more accurate invoicing
and earlier release of orders by Asda to ensure more efficient loading were also investigated.
Asda business development manager Matt Gaunt said: “Manufacturers have been keen to promote production-friendly batch sizes, while retailers want reduced inventory and matching of intake volumes to rate of sale. The costs of pursuing each objective exclusively impose costs on the other. Lean thinking and flow logistics aim to optimise the total chain.”
