Sir, We would like to set the record straight in relation to the article ’Food hygiene remains a serious public health problem’.

People living in and visiting Wales have every opportunity to know a food business’ rating. It has been a mandatory requirement there for food businesses to display food hygiene ratings where people can easily see them since November 2013. The scheme has proven extremely successful in driving up hygiene standards, with 68% of all rated businesses in Wales achieving the top rating of 5 and 96% achieving 3 or above.

We are keen to see mandatory display of hygiene ratings in England and we aim to progress this at the earliest opportunity. This will require legislation, and we are finalising the case for consideration by ministers and ultimately cross-government approval.
