Booker is highlighting the use of matcha powder in the guide

Booker has launched its 2025 Summer Catering Guide to spotlight new lines as it locks the price of more than 600 products.

Prices of items including selected beers, ciders, spirits and soft drinks, as well as Müller British Butter, Farm Fresh Closed Cup Mushrooms, Ihsaan Smash Burgers, and Chef's Essentials Battered Chicken Nuggets and Larder King Prawns, will be locked until 7 October 2025.

Designed to support caterers, chefs and operators this summer, the guide will also feature seasonal menu ideas and exclusive lines.

It aims to highlight trending lines across the wholesaler’s estate, including own-label and branded products, such as Korean food, loaded fries, protein and deli bowls, and matcha.

“Chefs would be wise to invest in ceremonial-grade matcha powder – it’s versatile and can be used for iced drinks, smoothies and shakes, in sweet baked goods and hot or cold desserts,” said Booker catering director Darren Brown.

“We suggest adding dessert options such as matcha pancakes with ceremonial-grade matcha powder, topped with double cream, strawberries and fresh mint – a stylish, summertime treat and certain to be a hit with the Instagram and social media crowd.”

Booker has also highlighted global barbecue fusion as a key trend, suggesting the addition of nachos, kimchi, slaws and pickles to burgers and hotdogs. It said that dishes with fusion flavour profiles can bring “incremental sales over the summer season”.

It follows the expansion of Booker's catering portfolio in May with the launch of a new World Cuisine range. It features Greek, Turkish, Italian, Indian and African-Caribbean products, as well as chicken shop items.
