Greens Retail is launching a new foodservice concept store dubbed ‘Greens on the Go’, The Grocer can reveal.
The Scottish retailer, which operates 27 convenience stores, said it marked a “clear shift” from traditional convenience towards an almost entirely food for now and food for later proposition.
It will open the first Greens on the Go store on 2 September in Edinburgh, operating 24/7, with further locations planned in the months ahead, Greens Retail said.
The store will feature a cereal bar, noodle station, salad bar, and nacho station. There will also be a raft of drinks and desserts available, including Goat Coffee, Fresh Blends which offers milkshakes, smoothies, frappes, iced coffees and refreshers, Boba Tea, FroMo mocktails by Skwishee, and Whipp’d soft-serve ice cream.
Its food-to-go range will also showcase a wide choice of freshly prepared options, including sushi, bagels, loaded fries, baked potatoes, hot breakfast rolls, soups, pizzas, international dishes, and bakery products supplied by Fisher & Donaldson. Vegetarian, vegan, gluten-free and halal options will also be available.
The concept store will sell a small amount of groceries and essentials, but the focus is primarily on food for now and food for later, Greens said. “Almost everything in store can be purchased and immediately consumed, either on the move or for the commute,” it added.
Thanks to its 24-hour operation, Greens on the Go aims to fill a “recognised gap in the market”, with rapid home and office delivery also coming soon through Just Eat, Uber Eats and Deliveroo.
“We set out to rip up the rulebook – this is the boldest move in Scottish convenience retail for decades. Two years in the making, it is unlike anything the sector has ever seen,” said Greens Retail MD Harris Aslam.
“This is bigger than the launch of Greens itself, given it’s not just a new brand – it’s a completely new proposition. We’ve taken inspiration from Scandinavia, continental Europe, the US, the Far East and even the Middle East.
“We have then challenged ourselves to rethink what a convenience store really is. From day one, the team were briefed that there must be a robust reason for any products which cannot be consumed instantly – that principle has driven every single decision.
“We’ve worked incredibly hard to maximise every square inch of the premises, ensuring simplicity, effectiveness and scalability. Along the way, we’ve created genuine firsts for the sector – from unlimited refill coffee to entirely new food stations. Greens on the Go isn’t just another store – it’s a reinvention of convenience retail.”
