Park Garage Group is deploying software to optimise product availability at its Bakery 79 concepts.
The forecourt operator launched twelve new bakery concepts in March, replacing former Greggs concessions. They sell a range of products made or prepared in store, including breakfast offerings, hot and cold sandwiches, pasties, sourdough pizzas, doughnuts, cookies and muffins.
To control in-store food production and availability of the products, Park Garage Group has installed bakery software management provider Cybake’s ISB software.
By using forecasts from historical and live sales data, Cybake ISB will tell Bakery 79 staff via tablets what products to bake or make when customer demand is strongest in order to optimise product availability and minimise waste.
Adjustments to the software’s suggestions are made throughout the day from live sales data updated every 15 minutes, via integration with the forecourt operator’s evoPOS till systems.
Cybake ISB also gives staff on-screen preparation instructions and provides them with any allergen and nutritional information that customers may require.
The group’s head office is then provided with KPI reports that monitor the progress of the Bakery 79 stores.
“We knew that attractive, fresh products that were on display when our customers wanted them would be key to the success of our Bakery 79 concepts,” said Park Garage Group operations director Hemant Tandon.
