Build-your-own sushi concept SushiDog is set to launch its first site outside of London next year, opening at Bullring Birmingham in January 2026.
Founded in London in 2017, the QSR brand offers customisable, made-to-order fresh sushi rolls, bowls and salads.
The new 500 sq ft store in Birmingham will feature seating for up to 25 diners and combine dine-in seating with a takeaway counter.
“We’re excited to bring SushiDog to Birmingham and introduce the concept to the city’s vibrant, creative community,” said SushiDog co-founder Greg Ilsen.
“Bullring’s right at the heart of the city, always lively, full of energy, and packed with people who love fresh, fun food – and SushiDog feels like a perfect fit.”
The opening builds on a period of growth for SushiDog, which now has stores on London’s Baker Street, Bank, New Oxford Street, Bishopsgate, London Bridge, Seven Dials, Soho, Strand, Warren Street and Westfield.
