As one of the first Asian ethnic food buyers with Linfood and Booker Cash and Carry in the 1980s/90s, I was convinced an explosion was about to happen in ethnic foods, and we can see today that chicken tikka masala is no longer considered an Indian food but a national food dish in most UK households. If war breaks out in Iraq, I suggest the MoD should supply ethnic food dishes to our brave boys and girls to keep their morale high. 

I do not agree with Richard Hutchinson's remarks that three quarters of over-65s have never eaten ethnic food.
But there is still great potential in ethnic foods with further innovations for the consumers, but the success of these will depend on authenticity and retail sales price.
