Bakeries have capitalised on the trend for better-for-you and free-from foods and will be showcasing the results in the bakery sector at IFE07.

BakeMark UK will be exhibiting its better-for-you cookie containing half the saturated fat of a regular cookie with reduced sodium and a higher fruit content. The company will also be launching the new Terry's Chocolate Orange Cookie - a double chocolate biscuit containing Terry's Chocolate Orange pieces.

The new dairy-free Fruit & Nut Medley cookie from Byron Bay is filled with fruit, nuts and seeds, while two new gluten-free cookies will also be unveiled at the show: apple & sultana and honey & oatmeal.

Buyers will also find companies

offering treats and indulgences.

Guinness wholegrain bread from Irwin's Bakery contains 17% real Guinness and has a distinctive malty taste.

Swedish cake specialists Almondy will be using the show to display its gluten-free Dark Chocolate Cake frozen dessert made with 60% cocoa solids. It has an almond biscuit base with chocolate cream, smothered with dark chocolate. A slice of the cake defrosts in 10 minutes and the cake lasts for up to seven days in the fridge.

In partnership with Divine Chocolate, Innov8ive Foods is launching a range of Fairtrade bakery items. These include double chocolate muffins, double chocolate chip muffins, mini chocolate muffins and a chocolate brownie, all under the Divine brand.

Greenhalgh's Bakery is celebrating its 50th anniversary with a range of traditional handmade pies. It will also be launching the Taste of Asia range of savouries using halal chicken, lamb and beef.

Fougasse bread with ham and walnuts, and Peperonici with a mix of mild and spicy jalapeños are two of the speciality breads Mantinga will be launching at IFE07. Other varieties include Greek spinach strudel and green olive loaf with Mediterranean herbs. It is also unveiling a portfolio of pastries including Strawberry Quark Dream and Apple Basket with apple, cinnamon, raisins and nuts.

Wrights Pies will be showing its range of hand-raised pork pies in sizes ranging from 4ozs to 6lbs, and speciality cutting pies such as turkey & ham with cranberries and stuffed chicken in red wine. Other products include the pea supper pie containing minced beef and mushy peas.n
