This pan-fry Pad Thai from Charlie Bigham’s might mark a slight departure from the brand’s signature oven dish approach but the gamble definitely pays off.
Marinated chicken, rice noodles and greens are coated with a tangy tamarind and makrut lime sauce, topped with roasted peanut. All home chefs need to do is finish the dish off for a few minutes in a frying pan to unlock the flavours. Months in development, with over 100 recipes trialled and tweaked before these latest meals were launched, our judges praised the “fresh and fragrant flavours and great texture…a great alternative to a takeaway”. The “innovative and creative cooking method” for a ready meal only added to the appeal.
