
Brewed Milk from Mossigiel Organic Dairy has launched into Modern Milkman.
Mossigiel’s Brewed Milk (rsp: £2.80/one litre) “offers a seasonally evolving flavour” which the brand said ranged from light, melted-ice-cream sweetness in spring to richer, buttery notes in colder months.
It is pasteurised at a lower temperature (68°C for five minutes) to preserve proteins and flavour while remaining safe and non-homogenised.
The process is also highly efficient, using about 90% less energy than traditional methods.
“People are looking for flavour, transparency and something that feels closer to the farm,” said Bryce Cunningham, managing director of Mossgiel Organic Dairy and farmer. “We cannot sell fully raw milk widely in the UK so brewed milk is our answer to consumer curiosity.
“It makes fantastic coffee and incredibly rich porridge!”
The taste comes from grass-fed cows, which are fed a natural, seasonal diet free from concentrates, GMOs, chemicals and synthetic additives.
The diet includes seaweed, which is included to provide natural iodine and support with the cows’ immunity, which the dairy said resulted in a “clean, evolving flavour”.
Moden Milkman said the SKU represented the top tier of its curated milk offering and was part of its commitment to providing a diverse range of options including minimally processed dairy.
“We’re seeing consistent demand from our customers asking about raw milk and there’s a growing curiosity around where food comes from and how much is processed,” said Jenny Thomason, UK head of commercial at Modern Milkman. “Because raw milk is so tightly regulated in the UK, we set out to find the closest possible alternative that still meets the highest safety standards.
