Fast-growing sushi brand IRO Sushi is to expand into Scotland for the first time, targeting up to 20 locations across the country.

The brand’s first Scottish site will open in Glasgow this summer at 294-257 Sauchiehall Street, taking over from the former Oodles Wok unit.

IRO Sushi is also actively seeking further sites and further franchise partners in Glasgow, Edinburgh and Aberdeen.

Founded in 2014 by trained sushi chef Chhong Sherpa, the business now operates over 35 locations, with 20 new sites having opened in the past three years. Recent openings in Bristol, Tunbridge Wells, Maidenhead and Woking during the first half of 2026 helped boost total system sales by 28% to £11.1m in the 26-week period.

The openings form part of IRO Sushi’s ambition to reach 100 locations globally by 2030, with growth in the UK, Europe and the Middle East.

“Glasgow is an important milestone for IRO Sushi and our first step into Scotland,” said Sherpa. “We have reviewed opportunities here for several months, and Sauchiehall Street gives us the right platform to introduce IRO Sushi to customers in Glasgow and build from there.

“We are already looking at further opportunities in Glasgow, Edinburgh and Aberdeen and believe Scotland could support up to 20 IRO Sushi locations over time. We will grow carefully with the right sites and franchise partners, while maintaining the quality, value and operating standards that have driven our growth.”
