Beans and pulses are good for people’s health – and better for the planet. A kilo of legumes produces two kilos of carbon, according to the United Nations, making it one of the most environmentally friendly foodstuffs. For comparison, the most environmentally damaging is beef, a kilo of which creates 70.6kg of carbon.
