Premium egg supplier Clarence Court is expanding its line-up of speciality eggs with guinea fowl eggs later this month.

The eggs, which are smaller than hens eggs, speckled and have a particularly tough shell, will go on sale in Waitrose at the end of April, priced at £3.99 for a pack of four.

Clarence Court said the eggs had a “richer yolk and purer white” than hens eggs, and could be used in baking and salads, among others.

Clarence Court is supporting its egg range with an ad campaign this spring, and its spokesman, chef Mark Hix, has developed recipes using speciality eggs, including guinea fowl egg mayonnaise with broad beans.
