The brand only uses sustainable and premium seafood from Norway and authentic sauces and toppings from Japan

Fast-growing sushi brand IRO Sushi has unveiled plans to open at least 10 new stores within the next year as it executes an expansion strategy to scale to 100 locations by 2030.

Founded in 2014, IRO Sushi currently has more than 30 QSR restaurants across the UK.

The food-to-go brand entered into franchising in 2019 and since August 2023, it has opened over 20 sites. This helped it deliver system sales of £16m in the year to end of March 2025, up 56% year on year.

Over the next 12 months, IRO Sushi has signed agreements to open at least 10 new stores with two new locations in Woking and Tunbridge Wells to open before Christmas.

Alongside its UK expansion, the brand will also look at opportunities across Europe and the Middle East.

The brand prides itself on sustainable sourcing credentials, which it notes are a “key point of difference”. IRO Sushi only uses sustainable and premium seafood from Norway and authentic sauces and toppings from Japan.

To elevate the brand, IRO Sushi recently underwent a rebrand with new logo and branding concepts, as well as new operational practices, and franchising guidelines.
