Jenny Costa,Co-founder, Rubies in the Rubble, on selling burgers, ‘reading’ the FT and being like a rabbit

What was your first-ever job? Working on the Drysdales burger van at the Ayr County Show. It was great fun.

What’s been your worst job interview? For a job in finance. I had just graduated in maths and thought I should go into the City. I bought the FT that morning and proudly sat it next to me without having read a page. The first question: ‘What was the most interesting thing you read about today and why?’

What was the first music single you bought? The Spice Girls - Wannabe. I still know every line!

How do you describe your job to your mates? I make condiments from fruit & veg that would otherwise be wasted.

What’s the most rewarding part of your job? Creating a market for something that was otherwise overlooked. And seeing people discover and love our products!

What’s the least rewarding part? Sorting out the logistics of moving fruit & veg around the country in a timely manner.

What’s your motto in life? Spend your time working towards what you love and have a passion for - then you’ll never have any regrets.

If you were allowed one dream perk, what would it be? Probably a helicopter to take me wherever, whenever.

What’s your favourite film? Good Will Hunting has to be up there.

What’s been the most embarrassing moment in your life? Most recently it was on a plane in Mexico - just as the engines revved up I had a flash food poisoning reaction and passed out. Doctors were rushed on, and an hour later I was escorted off - all because of a few too many tacos!

If you could pick a celebrity to join your staff who would it be? Why? Emma Stone or Miranda Hart - they are really funny and would be great people to have around!

If you could change one thing in grocery what would it be? The perception that food needs to be available year-round and in perfect shape and colour.

What luxury would you have on your desert island? Chilli! It would help me make some great-tasting dishes from whatever else I’m scavenging for.

What animal best reflects your personality? Probably a rabbit. I get pretty excitable and move quickly. I love to be free and outdoors.
