The statement "The average footprint of beef, excluding methane, is 36 kilograms of CO2e per kg, nearly four times the mean footprint of chicken and between 10 and 100 times the footprint of most plant-based foods" is probably from Poore & Nemecek (2018) which has been widely debunked. Extensive beef systems taken in their entirety as carbon/methane cycles have a benign impact and can in some cases carbon negative. The myth endures!
