First Milk is flexing its muscles in specialist cheese with the launch of its first unpasteurised milk cheese.

Kilmory Cheddar was developed in collaboration with M&S at First Milk's Torrylinn Creamery on the Isle of Arran. It has gone into M&S stores in Scotland this month (rsp: £2.99 for 200g).

Kilmory was a significant piece of NPD as there was currently a shortage of unpasteurised milk cheese in the UK, said First Milk sales and marketing director, Richard Hollingdale. It was also part of plans to differentiate the creamery's offering and add value, he added.

"This is our first venture with M&S and both of us have taken great care to ensure a first-class product."

The launch comes at a time when the unpasteurised cheese industry faces an uncertain future as TB continues to spread, forcing cheesemakers to use pasteurised milk instead.
