Co-op On The Go stores will open from 7am to 7pm

Co-op is launching a new chain of micro stores solely focused on food to go.

The first store opens today (31 July) in Solihull, with another 15 launching over the coming months. Co-op plans to open several hundred in the next two to three years, it said.

Each store will range from 600 sq ft to 1,000 sq ft, with “unique” opening times from 7am to 7pm, and feature new ‘On The Go’ signage.

They will boast a varied selection of food and drink to-go options to cater to different parts of the day, complemented by NPD exclusive to the micro concept.

These include granola pots, hot porridge, breakfast meal boxes and sandwiches that are made fresh for consumers in the morning using Co-op’s first ever over-the-counter service.

For lunch, a new deli selection will serve offerings such as smoked salmon, egg and spinach pots, sweet potato bhaji wrap, teriyaki chicken salad bowls, and tomato, mozzarella & pesto focaccia bagels.

Co-op Irresistible pizzas will also be offered to consumers for lunch and dinner and will be cooked in store on demand, which also marks a first for Co-op.

The next phase will see the stores turn to ‘dark trading’ in the evening, with pizzas being cooked and “delivered to your door in minutes” as it looks to compete against foodservice operators and build on its quick commerce operations.

Hot and cold drinks will also make up the new format’s offer, including wines and ready to drink single-serve cocktails.

“We are always looking at new ways to deliver convenience to our members and customers and these new stores are a perfect example of us using our expertise to refine our ‘on the go’ offer so it is focused on giving shoppers exactly what they need, when they need it,” said Co-op Food MD Matt Hood.

“It’s a brand-new concept, which we believe there is a big demand for and which we can meet with delicious products, quick service, good value and spot on locations. I’m excited to see this evolution of Co-op stores, join our traditional convenience stores across the UK.”

In 2018, Co-op launched an On The Go store format designed for a quicker shopping experience, with fast self-service tills and a larger focus on its food-to-go alongside a traditional convenience offer. The new format solely offers products and meals for those on the go as it targets the foodservice sector.
