Co-op’s first ‘on the go’ concept store opened on 31 July in Solihull

Co-op has opened its second ‘on the go’ concept store, in Altrincham, Trafford, as it continues to grow into the foodservice space. 

Located in the Stamford Quarter, it focuses on transient consumer culture, offering breakfast, lunch and dinner in new formats including a hot food serve-over counter and deli-inspired selections.

Unlike Co-op’s traditional convenience stores, the new ‘micro’ store solely focuses on food and drink to-go options to cater to different parts of the day.

Extensive new product development exclusive to the format includes all-day breakfast meal pots, berry burst bircher, and apple and cinnamon overnight oats.

For lunch, a new deli selection will serve offerings such as smoked salmon, egg and spinach pots, sweet potato bhaji wraps, falafel and houmous salad bowls, chicken, bacon and avocado caesar wraps, and tomato, mozzarella and pesto focaccia bagels.

Doors open from 7am to 7pm, with online home delivery also available. After 7pm, the store moves to online trading only, which includes Co-op’s Irresistible pizzas cooked and delivered to the community “in minutes” via Co-op’s quick commerce partners Just Eat, Deliveroo and Uber Eats.

Whether in store or online, we cater to ‘on the go’ meals throughout the day. At breakfast, lunch and dinner you will find delicious products, quick service, quality and value, and all in a great convenient location.”

Co-op’s first ‘on the go’ concept store opened on 31 July in Solihull, with plans to open 15 in the coming months. It expects to open as many as several hundred in the next two to three years, it added.
