Wilding’s made its grocery debut in 2016 with Peking Duck Crackling

Wiltshire snack startup Wilding’s is set to roll out a range of lamb crackling – in what it claims is a UK first for bagged snacks.

Made from British lamb, the crackling is inspired by arrosticini, a grilled lamb dish from the southern Italian region of Abruzzo. The result of “months” of development, the two variants, Mint and Moroccan Spices (rsp: £1.89/28g), offer “a light crunch” and “the perfect balance of flavour and texture”, according to Wilding’s.

The NPD adhered to the “brand ethos of celebrating the whole animal” said the brand, which was founded by Adam Wilding, a former head chef of kitchens including London gastropubs The Harrison and The Beckford Arms.

The business made its grocery debut in 2016 with Peking Duck Crackling, made from duck skin typically thrown away by poultry suppliers or sold to petfood manufacturers. It now makes three variants of the triple-cooked snack, and is preparing to launch duck fat in a jar.

The brand currently passes on its duck fat to a waste oil recycling company to be used as biofuel.
