
Lidl has teamed up with budget-focused chef Miguel Barclay to create an evening meal plan costing under £7 a week for new university students.
Barclay, author of the book series One Pound Meals, has come up with seven healthy and balanced meals for £1 or less using Lidl ingredients.
Timed to help new students during freshers’ week, the seven recipes include a black bean burrito for 73p, meat-free smash burger tacos for 68p, and sticky Korean tofu brown rice for £1. Meat and fish options include a shredded chicken satay stir-fry for 88p, bombay beef potatoes for 81p, and chilli tuna pasta for 92p.
However, students will need to plan meals and avoid waste carefully to achieve the price points. For example, the bombay beef potatoes recipe uses 40g of grass-fed minced beef, which is sold in packs of a minimum 400g for about £5. As it is the only one of the seven meals which uses the product, students will have to make it 10 times to be in budget using Barclay’s plan. Lidl’s grass-fed mince beef has a shelf life of around 16 days.
“Student budgets can be tight, but that shouldn’t restrict access to delicious, healthy meals,” said Barclay.
“I’ve really enjoyed reimagining some classic student staples with an approach that’s nutritious, kind to the planet and affordable.
“The seven meals for £7 elevate simple ingredients into delicious and filling meals via step-by-step recipes that will be easy to recreate in student halls – helping them to eat well without eating into their budget.”
Lidl is also giving students the chance to win a ‘Live Well Golden Ticket’ through its loyalty app, earning them one free product from its Live Well range each week for the rest of the year. The Live Well is logo is intended to identify products that are beneficial to both health and the environment.
